Mexican Rice


I love a good Mexican feast with all the trimmings. It always reminds me of sunny days and lazy times on patios. A frosty Corona with lime or a margarita never hurts either. I found a recipe for Mexican rice here and it couldn't be easier, leaving time for another margarita and swinging in a hammock. I would serve it as a side, topped with chopped green onions and cilantro, or stuffed in a burrito with black beans and salsa. Yummy!
